Recently, bananas were named the top selling fruit in the United States.  The banana is widely available around the globe.  They are used in all sorts of cooking and baking recipes everywhere, but the raw fruit is a treat within itself.  We can use them in breakfast smoothies, cereal, baked goods or just a fast, easy snack on the go.

Bananas also have a high fiber content.  This helps us slow digestion and also keep us feeling full longer throughout the day.  Since they are loaded with potassium, bananas are the perfect workout snack.  Not only potassium, they are a good source of vitamins C, B6 and manganese which is necessary for bone health and also metabolism.

It’s hard to keep bananas around my house because my family loves them so much.  Recently, my daughter started working at a local grocery store, so when she came home and told me they had bananas on clearance, I had to run and grab a bunch for this banana bread recipe.  My mother made this recipe since she has been baking and my family loves this recipe so much I had to make two loaves or I wouldn’t get any.

Start off by mushing the bananas completely.

Stir together flour, baking soda, baking powder and salt in a bowl.  Set aside.

Next cream the butter and sugar together until well blended.

Add the eggs one at a time, blending well after each one.  Add the milk and dry ingredients and mix until well blended.

Finally, add the mashed bananas and mix well.  Pour into loaf pan and bake 1 hour at 350 degrees.  Let cool in pan for 10 minutes. Transfer to wire rack.  Finally, cool completely and enjoy a piece of delicious banana bread.

SHANNON’S BANANA BREAD

Prep time: 20 minutes

Bake time: 60 minutes

Servings: 10

 

Ingredients:

1/3 cup butter, softened
1 cup sugar
2 eggs
3 Tbsp. milk
1 tsp baking soda
1 tsp baking powder
½ tsp salt
2 cups flour
3 medium bananas
1 cup nuts (optional)

 

Directions:

1. Preheat oven to 350 degrees.   Spray loaf pan with nonstick cooking spray.

2. In a small bowl, completely mash bananas.   Set aside.

3. Mix dry ingredients together.  Set aside.

4. Cream together butter and sugar. Add eggs one at a time, mixing well after each.

5. Add milk and dry ingredients.   Beat until well blended.

6. Add mashed bananas and nuts into the batter.  Mix well.  Pour into greased loaf pan.

7. Bake 60 minutes.

8. Let cool in pan for 10 minutes. Transfer to wire rack.  Finally, cool completely and enjoy a piece of delicious banana bread.
